Torrone is an Arab invention that arrived in Sicily in 1400 after having undergone a 'deviation' in Spain, where a new way of binding toasted almonds was devised compared to the Arab tradition: the Spanish, in fact, used to toast the almonds and insert them into a sweet and stringy paste made from egg whites and sugar. A real boost of energy for merchants, soldiers and artisans.
Today, although it is a typical Sicilian Christmas dessert , torrone is a delicacy that is increasingly spreading on Italian tables as an ideal dessert at the end of a meal, perhaps before a good coffee or in the company of a Sicilian bitter or a craft spirit !
