Some sources report that the particular processing of the cocoa mass in combination with sugar was introduced by the Spanish rulers in the County of Modica in the sixteenth century who learned from the Aztecs the technique of processing cocoa beans through the use of metate (a type of millstone used for processing cereals and seeds). The Aztecs, at the time, were unaware of the existence of sugar and used to consume cocoa in liquid form. The first to add sugar to the bitter mass of cocoa were the Spanish, the true fathers of the producers of the first archaic form of chocolate which rapidly spread throughout their domains, including the County of Modica which, over the centuries, has made chocolate its distinctive element recognized all over the world .
