Modica PGI chocolate is the first Italian chocolate to be protected by a certification from the European Union, receiving in 2018 the PGI stamp , Protected Geographical Indication which recognizes the product's value linked to artisanal and territorial production following a precise and strict disciplinary production.
The strength of the product lies in the simplicity of its ingredients : cocoa mass, sugar, natural flavors or grains or spices: no vegetable fats, no milk, no vanillin, no soy lecithin, no emulsifiers, no dyes, no preservatives. The granular consistency of this Sicilian chocolate is given by the particular processing that takes place below 40°, to ensure that the sugar granules do not melt completely. In this phase the cocoa mass is processed together with the other few ingredients, giving rise to numerous and exceptional chocolate flavours.
The origin of Cioccolato di Modica, or Modica chocolate , is doubtful: Aztecs or Spaniards?
Some sources report that the particular processing of the cocoa mass in combination with sugar was introduced by the Spanish rulers in the County of Modicain the sixteenth century who learned from the Aztecs the technique of processing cocoabeans through the use of metate (a type of millstone used for processing cereals and seeds). The Aztecs, at the time, were unaware of the existence of sugar and used to consume cocoa in liquid form. The first to add sugar to the bitter mass of cocoa were the Spanish, the true fathers of the producers of the first archaic form of chocolate which rapidly spread throughout their domains, including the County of Modica which, over the centuries, has made chocolate its distinctive element recognized all over the world .
