Nougat is an Arab invention that arrived in Sicily in 1400 after having undergone a 'deviation' in Spain , where a new way of binding toasted almonds was devised with respect to the Arab tradition: the Spaniards, in fact, used to toast the almonds and insert them in a sweet and stringy paste made with egg whites and sugar. A real boost of energy for merchants, soldiers and craftsmen.
To date, although it represents a typical Sicilian Christmas dessert , nougat is a delicacy that is increasingly spreading on Italian tables as an ideal dessert at the end of a meal, perhaps before a good coffee or in the company of a Sicilian amaro or a Passito 100 % organic !
