HISTORY OF WINE
Definitely the best known and most cultivated white grape variety in the world, Chardonnay still has rather obscure origins. Some scholars think that it has Middle Eastern origins, that it comes from ancient Persia, but recent studies suggest that it is a spontaneous crossing between Pinot Noir and Gouais Blanc, which most likely took place in the Carolingian era in Burgundy. Originally planted by the Cistercian monks of Pontigny Abbey, from there it would gradually spread throughout the world from the end of the 19th century. According to another theory, however, the origin of Chardonnay, a name that has Jewish origins, should be sought in the hills of Jerusalem, hills with clayey soil in which this vine grows very well. The first Crusaders, on their return from the Middle East, would have brought back a wine whose original name was Porte de Dieu or the translation of the Hebrew name Shahar Adonay, which means precisely "the door of God".
